Salad
- 1 whole pita bread toasted and cut into pieces
- 1 head romaine lettuce chopped
- 1 medium tomatoes chopped
- 2 medium Persian cucumbers chopped
- 3 whole radishes sliced
- 1/2 cup parsley chopped
- 1/4 cup fresh mint chopped
- 1 jalapeno chopped
Dressing
- 1/4 cup extra virgin olive oil
- 1 lemon juiced
- 2 tbsp pomegranate molases
- 1 tsp sumac
- salt & Aleppo pepper to taste
In a small bowl, whisk together all the dressing ingredients. Taste and adjust; ultimately, you want that bright, citrusy punch!
In a large bowl, toss together all the chopped veggies and herbs.
Drizzle the dressing over the salad, then toss it all together.
Top with the pita chips right before serving to keep them crunchy.
