The Crunchy, Zingy Salad That’s Anything But Boring
If salads had a main character moment, Fattoush would be it.
This bright, bold Lebanese classic is everything I love in a bowl: crisp veggies, fresh herbs, a hit of lemon, and toasty pita chips.
I grew up with these zesty, tangy, vibrant flavours, and honestly, I come back to it whenever I need a reset. It’s like a kitchen refresh button in salad form. Light, crunchy, and totally satisfying.
What Makes Fattoush So Special?
Between the sumac-spiced dressing and the crunch of toasted pita, every bite gives you texture and flavour. It’s the perfect balance of sharp, savoury, and fresh.
And the best part? It’s super flexible. Clean out your fridge, throw in what you’ve got, and let the dressing do the heavy lifting. Serve this as a side dish to your favourite summer BBQ, or make it the main event by adding your choice of protein.Don’t forget about it’s perfect partner hummus, for a fresh, simple, and nourishing meal that feels perfectly complete.
Fattoush Salad
Materials
Salad
- 1 whole pita bread toasted and cut into pieces
- 1 head romaine lettuce chopped
- 1 medium tomatoes chopped
- 2 medium Persian cucumbers chopped
- 3 whole radishes sliced
- 1/2 cup parsley chopped
- 1/4 cup fresh mint chopped
- 1 jalapeno chopped
Dressing
- 1/4 cup extra virgin olive oil
- 1 lemon juiced
- 2 tbsp pomegranate molases
- 1 tsp sumac
- salt & Aleppo pepper to taste
Instructions
- In a small bowl, whisk together all the dressing ingredients. Taste and adjust; ultimately, you want that bright, citrusy punch!
- In a large bowl, toss together all the chopped veggies and herbs.
- Drizzle the dressing over the salad, then toss it all together.
- Top with the pita chips right before serving to keep them crunchy.
